Ployes: French Buckwheat Pancakes

"A French Canadian crepe that is used in place of bread or served as a breakfast pancake. Great for lunch wrapped around chicken salad or served w/ warm maple syrup for brunch.I highly recommend using Rumford brand baking powder."

directions

  • Mix dry ingredients.
  • Add cold water and let stand for 10 minutes.
  • Add boiling water and drop to make thin 6" pancakes on hot griddle, 400 degrees I use ungreased cast iron fry pan or non-stick electric griddle, ungreased.
  • Bake on one side only, until bubbles break and pancake is firm.
  • Serve on warm platter.

  1. Thanks for a great recipe! My dad is from Aroostook county and has always told me about how his grandmother made ployes. Unfortunately, when he asked her for the recipe, she had forgotten! We've had many failed attempts at replicating the ployes from my dad's childhood, but I think this recipe is finally what we were looking for. We enjoyed these hot from the pan spread with melted butter. Delicious!
     
  2. As a native of Aroostook County Maine I grew up eating Ployes almost nightly. I now serve them to my children on chilly afternoons. Ployes are especially delicious when spread with butter and then rolled up. My family likes to dip them in maple syrup or molasses.

  4. As a French Acadian in northern Aroostook County, Maine, we served these warm with Homemade Baked Beans on a Saturday night. We'd eat them hot off the pan, rolled up, with butter. Sometimes we had a pork spread (Cretons) that we'd spread on them. Delicious!
     
  5. I just wanted to give an opinion from someone who had not had this type of pancake before. For my taste, I needed to use butter on the griddle - tasted a bit sour to me without fat. Otherwise worked out fine. Wanted to give 5 stars because the recipe is authentic and doesn't deserve to have lower ratings.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
