  • Preheat oven to 180o Celsius
  • Grease and line the base of a 24cm springform cake pan with non-stick paper.
  • Combine flour, sugar and coconut in a mixing bowl. Stir in the melted butter, eggs, milk and vanilla and mix well.
  • Spread half the mixture in cake pan. Scatter plums over mixture. Spread remaining mixture over plums.
  • If have extra plums cut into segments and arrange over the top of the cake.
  • Bake for 1 hour or until cooked when tested with a skewer.Cover with foil if it is overbrowning and still not cooked.
  • Stand for 10 minutes in a pan before releasing the springform. Serve sliced, warm or at room temperature.
  • Delcious with custard or cream.
