  • Fry tortillas in oil to soften.
  • to the tortilla add:

  • cheese.
  • shrimp.
  • crab.
  • onion.
  • then roll and place on baking sheet.
  • bake @ 425 for 10 minute.
  • for the poblano sauce:

  • in a blender blend.
  • poblano peppers.
  • cilantro.
  • sour cream
  • roasted toamtilllo.
  • sweet onions.
  • melt butter.
  • add:

  • all blended ingredients.
  • 2 cups cheese.
  • bring to melting point.
  • stir constantly.
  • do not allow sauce to boil.
  • serve sauce over enchiladas.
