Polish Tuna Melt Sandwich

"There I was, a lunch to make, and a can of tuna in my hand. I don't know what got into me, but I just wasn't ready for the same old tuna salad sandwiches. I opened the fridge, and here's the result. Try other ingredients, ie fontina cheese, pepperonconi, sliced tomato. Yeah...before you say it...I know this sounds Italian, but I'm part Polish...so there!"

  • Preheat broiler.
  • Mix first 5 ingredients in a bowl. Taste and adjust as desired.
  • Spead tuna mixture on 6 slices of bread and cover with cheese slices.
  • Spread a little mayo on other 6 slices.
  • Place all 12 slices on a baking pan and broil until cheese is melted and starting to brown.

  1. This was pretty good, but unexpectedly bland. It definitely needs more olives and more pepperoncini juice. Salt would also help. It might be good on English muffins. Thanks for posting!
