ingredients
- 1 medium onion, diced
- 2 (14 1/2 ounce) cans fire-roasted diced tomatoes
- 1 (14 1/2 ounce) can black beans, mostly drained (plain or seasoned-type)
- 1 cup frozen corn (fire-roasted if you can find it)
- 1 (1 1/4 ounce) package taco seasoning (chipotle-flavored, regular or low sodium is fine)
- 1 tablespoon ground cumin
- 1 tablespoon dried cilantro or 1/4 cup fresh cilantro, finely diced
- 1 tablespoon lime juice (fresh or concentrate)
directions
- In large plastic container, mix all ingredients. Chill for about 1 hour for flavors to blend. .
- Serve with tortilla chips and enjoy!
