Polynesian Meatballs (For Party Trays)

"This is a repeat status recipe. I fix them mostly for my grown son's parties now, and they are the first item to go. Especially in demand during the Holiday Season. An old Southern Living recipe."

  • Meatballs:.
  • Preheat oven to 450 degrees. Combine all ingredients in a large bowel, mixing well. Shape mixture into 1-inch meatballs. Place on a rack in a shallow baking pan. Bake 12 to 15 minutes or until brown.
  • Sauce:.
  • Mix together all ingredients except pineapple in a large saucepan over medium-high heat. Bring to a boil; reduce heat to medium and simmer 10 minutes. Stir in pineapple. Spoon meatballs into sauce, stirring until well cooked. Continue to cook 19 to 15 minutes or until heated through. Serve hot.
  • Should yield 75 meatballs.

  1. Thanks for these tasty meatballs. They go far. I used veal, pork and beef mixture (4 pounds)for these meatballs. Using my Recipe #461723 Mock pineapple, using oatmeal for the cornflakes. Skipped the honey and cut back on the sugar. Added 1 diced red bell pepper.
     
  2. Great Recipe idea! I did use the corn flakes-great idea! I used ground beef. I only had i/4 cup brown sugar and it was okay I 1 1/2 X the recipe and added 4 ribs of thinly sliced celery and 1/2 onion slices and a sliced green pepper (julienned) and 1/2 red pepper done the same I also used 2 cans cubed pineapple with the juice. These additional ingredients made it more of a meal than a "appy" served it over fluffly white rice... nice exotic switch for a thursday night staring at a bunch of ground meat ready to expire, and sooooooo sick of hamburgers and meatloaf! ALTHOUGH the cornflakes are going to be my next experiment on meatloaf night! Happy KOOKIN!!!!"--- Dawn
     
  3. I made these for dinner tonight and changed a few things in the meatballs. I used soda crackers for the corn flakes and evaporated milk instead of regular. The meatballs were great even by themselves. The sauce I followed the directions and we thought it was a little too sweet. Next time we will omit the honey and use less brown sugar. Other than that, we enjoyed the dish. I served them with yellow rice for a main dish. Thanks for the recipe.
     
  4. I made this for a party over the weekend and everyone could not stop talking about how good they were. I was a cooking champ thanks to this recipe. TY P.S. The other reviews were some good ideas too, i might try them next time with scallions or make them spicier.
     
  5. My husband and I both liked this dish a lot. The only thing that would make it a 5 star instead of 4 was that it was a bit too sweet for our taste, and we even left out the canned pineapple which is usually sweetened. Next time I will cut the amount of honey in 1/2 and maybe put less sugar, and add something spicy in. But overall, it was easy and yummy. We served it with rice for a main dish.
