Pomegranate and Blueberry Oatmeal

"Another way that I have enjoyed oatmeal recently. Tastes wonderful topped with sliced or slivered almonds. Make sure that you use the milk--it gives the oatmeal an excellent creamy texture. This may not be for everyone's tastes since the seeds are a bit crunchy, but I think that it adds a nice texture constrast to the creaminess of the oatmeal."

  • Prepare quick oats using package directions in microwave, using skim milk in place of water.
  • Stir in pomegranate seeds and blueberries. If desired, crush a few of the pomegranate seeds with back of spoon to release some of juices into the oatmeal. Stir in sugar or sugar substitute, if desired.
  • Top with sliced almonds, if desired.

  1. I eat so much oatmeal that I'm always looking for ways to keep it interesting. Using pomegranate seeds leftover from another recipe added a nice crunch! I only needed half the amount of milk.
     
  2. Great oatmeal. I love pomegranate seeds, and enjoyed having them at breakfast too! I didn't have any blueberries, so I had to leave those out. I love the almonds with it.

I am 22 years old, and recent grad from Marquette University. I have accomplished something that I have always wanted to do, which is become more healthy. My favorite cookbooks are the Joy of Cooking, since they tell you how to do everything in that book, and the American Heart Association Cookbook, 7th Edition since they tell you how to "health out" your favorite recipes. They also have some pretty awesome dishes in the book, for not a lot of calories. Just make sure to watch your portion size! :D Aspiration: I want to go to medical school and become a pediatrician. I want to be able to go to Africa and serve the people there, and to help out those in need here. Eventually I want to have my own private practice.
