- 1⁄2 lb carrot (approximately)

Glaze
- 2 tablespoons pomegranate syrup
- 2 tablespoons raw apple cider
- 2 tablespoons olive oil
- 1⁄2 teaspoon cumin seeds, lightly crushed or 1/2 teaspoon ground cumin
- 1 tablespoon honey (can sub agave)
- 1⁄2 teaspoon cumin seeds, lightly crushed or 1/2 teaspoon ground cumin
- salt and black pepper
directions
- Preheat oven to 375 degrees.
- Depending on the size of the carrots either cut in half or quarters lengthwise.
- Whisk together the glaze mixture and toss with the carrots.
- Place the carrots in an oven proof roasting dish.
- Roast for about 20 minutes or until fork tender.
- Garnish with fresh herbs if desired.
