Poor Man's Mac & Cheese Casserole

"My husband's Great Grandma made this for him and his sibilings when they came to visit. Only five ingredients, simple and easy to make. Ground beef, corn, cream style corn, peas, and mac & cheese. A real kid pleaser and one of my husband's favorites. I couldn't find anything else like it on the Zaar."

  • 2 lbs ground beef
  • 2 (14 ounce) cans cream-style corn
  • 1 (14 ounce) can whole corn
  • 1 (15 ounce) can peas
  • 2 (7 1/4 ounce) Kraft macaroni and cheese

directions

  • Brown ground beef and set aside and keep warm. Or brown while cooking mac & cheese.
  • Cook macaroni & cheese (I prefer Kraft brand)according to directions on box.
  • Add ground beef, cream style corn, drained whole corn, and drained peas to macaroni and cheese. And you're done!
  • If it's to dry for your taste just add some more milk.
  • Frozen corn and peas can be used if you prefer.

  1. I made this for the kids, an older family member, and my husband and I. It was a good recipe - very kid friendly- my son ate 3 kid helpings and the family member,who likes little to no spices, enjoyed it a great deal. Be aware that it has very little seasoning to it. My husband and I were trolling the pantry for spices to throw in. Just be sure to kick it up a notch if you are a big seasoning person. Thanks mrsmeduck for posting this kid friendly meal!

I was born, raised, and still live out in the country by Oshkosh, WI. Yes, Oshkosh B'Gosh and also home of the EAA AirVenture. You can see one of the runways from our backyard. Mother of a one year old boy, three cats, one dog, and several fresh and salt water fish (including seahorses). Very happily married for two years. I love to cook for others and myself, crochet, knit, having campfires in the backyard, reading (especially books by Louis L'Amour), gardening, going to Walt Disney World, and spending time with family and close friends. We went on a Disney cruise on the Wonder, September of 2006 and it was great! We are going again this year in September (2008) or to Walt Disney World. In 2012 we will visit Disneyland, and maybe we will see Tokyo or Paris Disney sometime. My husband has been an EMT, firefighter, and a Sheriffs deputy; hence my public name: Mrs. Meduck (medic). He has a very limited list of foods that he will eat. He says he is just selective. It's very hard and pretty much impossible to find something new and different to cook that he will like. He doesn't like ANY spices unless you count ketchup as a spice. I am hoping our son isn't as "selective" when he gets older. I work for a retail chain called Mill's Fleet Farm, in the Hardware/Paint department. I have also worked in the Sporting Goods dept., the Auto Service Center (writing work orders & working on cars), and in Loss Prevention. My husband has shown me how to work the digital camera and now my new passion is finding recipes I like and posting photos if there isn't any posted yet.
