- Boil together: raisins, lard, applesauce, and 1 cup water.
- Add sugar, cold water and dry ingredients to hot mixture, mixing well.
- Stir in the rest of ingredients.
- Pour into a buttered cake pan.
- Bake at 325 degrees for 90 minutes or until done.
- May be served with whipped cream or white (hard) sauce.

More than anything else, I made this cake just to see what it would be like, & must admit that, in spite of making a few changes, the result was wonderful! I did cut the amount of gumdrops in half & diced them small, & then I substituted diced, dried apricots for the candied fruit! That, along with the raisins & dates made for a delicious, fruity cake! Many thanks for posting the recipe! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
