Poorman's Cake

"This is the recipe my friend Darlene uses for Christmas for a fruit cake, only she adds applesauce. The cake will keep indefinitely. These were cheap cakes to to serve at camps for desserts. When Darlene shared the recipe with me, there are no baking instructions on this... so I'm guessing on times and temperature."

  • Boil together: raisins, lard, applesauce, and 1 cup water.
  • Add sugar, cold water and dry ingredients to hot mixture, mixing well.
  • Stir in the rest of ingredients.
  • Pour into a buttered cake pan.
  • Bake at 325 degrees for 90 minutes or until done.
  • May be served with whipped cream or white (hard) sauce.

  1. More than anything else, I made this cake just to see what it would be like, & must admit that, in spite of making a few changes, the result was wonderful! I did cut the amount of gumdrops in half & diced them small, & then I substituted diced, dried apricots for the candied fruit! That, along with the raisins & dates made for a delicious, fruity cake! Many thanks for posting the recipe! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
