Pop Pop's Turkey Chili

- 2 tablespoons vegetable oil
- 1 1⁄2 cups chopped onions
- 1 cup chopped celery
- 3 garlic cloves, minced
- 1 1⁄4 lbs ground turkey
- 2 (15 ounce) cans tomato sauce
- 1 1⁄4 teaspoons chili powder
- 1 teaspoon ground cumin
- 2 (15 ounce) cans red kidney beans
- salt and pepper
directions
- Heat oil and saute onion, celery, and garlic until onion is golden.
- Add turkey, saute until turkey is no longer pink, breaking it up into small pieces as it cooks.
- Add tomato sauce, chili powder, and cumin and stir.
- Bring to a boil, reduce to low, cover and simmer 20 minutes, stirring occasionally.
- Mix in beans, salt, and pepper (to taste).
- Cover and simmer 30 minutes.

Made this chili primarily to freeze, but kept out enough for a meal for the 2 of us! I did cut the chili powder back to 1 teaspoon, used slightly less cumin than listed, added a 3rd can of kidney beans & then used lemon pepper instead of the usual S&P! All that for another GREAT TASTING CHILI! I might add a can of drained diced tomatoes when I thaw out a 2-serving packet of it, but that's about all!
