- 1 (18 ounce) box lemon cake mix (not pudding type)
- 1⁄2 cup oil
- 1 (3 1/2 ounce) package instant coconut cream pudding mix
- 4 eggs
- 2 tablespoons poppy seeds
- 1 cup water
- 1⁄2 teaspoon lemon extract
directions
- Beat cake mix, oil, pudding mix, and eggs until well blended.
- Stir in water, poppy seeds and lemon extract.
- Pour into 2 well greased loaf pans.
- Bake at 350°F for approximately 40 minutes or until they test done.

Delicious!! I couldn't find any lemon cake without pudding so I tried my luck with the lemon cake mix w/pudding. I had to bake it an additional 15-20 minutes (I just checked it every 5 mins to make sure it was done). It turned out awesome!! Moist, great lemon flavor! I made this for my daughter's teachers as a thank you gift - This is going on my Xmas baking gift list!!
