  • -Mix coconut and oats in large bowl and set aside.
  • -Mix sugar, cocoa, butter and milk in heavy saucepan over medium heat.
  • -Cook stirring constantly until sugar dissolves.
  • -Bring to a boil point and boil for about 3 or 4 minutes (until soft ball stage).
  • -Remove from burner and add vanilla.
  • -Immediately add bowl of coconut and oats; mix until blended.
  • -Drop from teaspoon onto wax paper and let stand until cool.

  1. I am sorry to say that this recipe did not turn out for me. I had a lot of difficulty with it....the cookies hardened too quickly, and were too dry. I believe that there was too much dry ingredients for the amount of liquid, or that the cooking time was too long. I cooked for 3 minutes only. The few cookies that had shape were too hard to eat. I saved the crumbs for adding to pudding, ice cream, cakes and cookies as the flavor was very nice. I am giving three stars because of the flavor of the cookies only....Thank you for sharing. Made for Spring Pac 2014.
