Pork and Asparagus Stir-Fry

"I got this recipe from a Canadian Living Magazine. Our family really liked it. I used sherry, but you can use Chinese wine. You can use a different kind of mushroom if you prefer. I served it over rice."

  • In a bowl, combine pork, half of the sherry, soy sauce, cornstarch and ginger to coat. Set aside.
  • Cut each asparagus stalk into 4 pieces. Set aside.
  • In a wok, heat oil over high heat and stir fry onions until fragrant. Add pork and stir fry until no longer pink.
  • Add asparagus and mushrooms and stir fry for about 1 minute. Stir in chicken broth, sugar and remaining sherry. Stir fry until asparagus is tenercrisp.

  1. This is a nice stir-fry. Very nice, but it seems to be slightly under-seasoned to me. I added a little soy sauce, sesame oil and salt, and now I'm quite happy with it. I didn't season it so strongly that the flavor of the vegetables is washed out. From that point of view, this is a nice place to start seasoning, cautiously. I also prefer green onion, and even asparagus in somewhat smaller pieces. I'd like to give 4 1/2 stars here, but can't. Thank you for sharing this recipe with us.
     
  2. Delicious. I madee the recipe as directed except for adding a little sesame oil. A great way to use up leftover pork.
     
  3. Served over lo mein noodles, using leftover roast pork and--drat-- the only mushrooms in the house at the moment--product of USA canned buttons...and it was a great meal. Omitted the sugar and green onions. The sauce was nicely balanced and the flavor of the asparagus ruled. Thank you.
