Pork and Green Chile Stew

"Recipe came from friends in Utah--Gracias, Tex and Malva. It is a mild, rich dish--a good intro to Mexican for folks who don't like "spicy" things. Makes a lot, but leftovers are great."

  • Dice the pork butt, removing as much fat as possible.
  • Throw everything in the crockpot on low, go to work and come home to green chile stew.
  • Serve with flour tortillas, lettuce, tomatoes, sour cream, guacamole, salsa.
  • I also like to add a couple cans of hominy--then you have posole.
  • You can do this on the stovetop or oven, as well.
  • Just simmer til the pork is tender.

I live and garden on two acres in the Missouri Ozarks. I have a 130 year old house, a big veggie garden, weedy flower beds, 2 dogs, 3 cats, 25 chickens and 4 ducks. I work with Unversity of MO Extension Service, with 4-H'ers. Besides gardening and gathering eggs, I like to cook, sit on the front porch, brew beer, read, teach the dog goofy tricks, work on my house--I recently put in a bathroom, mostly all by myself. I am divorced, mom of 2 grown sons, looking for a man with a tractor. But not looking too hard--I have tasted freedom and I like it.
