directions

  • Sprinkle chops with a little salt, pepper and garlic powder.
  • dredge chops in flour and set aside.
  • pour oil into large skillet and cook the chops in hot oil until golden brown on both sides.
  • set chops aside.
  • spray baking dish with non stick spray.
  • combine beef consomme,4 cups of water and rice into baking dish.
  • sprinkle salt and pepper and stir with a fork.
  • add chops to rice mix.
  • cover with foil and bake at 350 for 40 minutes.
  • take out of oven and remove foil.
  • stir in 2 tablespoon of butter.
  • bake an additional 30 minutes or until rice is done. additional water may need to be added.

  1. I thought this was delicious!! The rice was so creamy. I do agree with a previous reviewer that the directions were a bit confusing because the ingredients list calls for 2 cups water and the directions call for 2 cans. I used 2 cups, and when I went to add the butter I also saw that it didn't look like any water had been absorbed. And even after I took it out of the oven, there was still a lot of water. But somehow by the time we ate it (maybe 5-15 min later) the water had all been absorbed. I loved it! A definite keeper!
     
  2. I hate to give this seemingly simple and delicious recipe a low rating so I will just review the few problems I had with it. First of all, the directions call for 2 c of water to add to the consomme, but further down in the directions, it calls for 2 cans of water, which is a difference of 5 oz of liquid. I ended up using the 2 c of water and added that along with the consomme to the pork chops. I covered it as directed and baked. It did smell delicious while baking, but when I went to stir in the butter, my rice had not absorbed any of the liquid, it seemed like. Maybe if I had heated the liquids first and then added it to the baking pan? I tried to bake it an additional 15 minutes to see if that would finish it, but it did not. The pork chops however were very tender and moist, but we were not able to eat the rice. I do not think we will be making this again as written, but might try baking the pork chops in a little consomme next time we feel like pork for dinner, since it was very well seasoned and moist. Sorry!!!
     
  3. The flavor of this dish is wonderful. But next time I make it I think that I will cut back on the water. The rice turned out a little soupier (is that a word?) than what we would have liked. We prefer a firmer rice. The only change that I made was to add a little Greek seasoning to the rice mixture before baking just to add a little extra spice. We will be making this one again! Thanks Parkers Mom for a very simple and tasty dinner!
