Pork Chops and Applesauce Gravy

  • Heat oil in skillet and brown chops at least 2 minutes per side.
  • You want a brown crust to form on the meat.
  • Layer chops in a casserole dish, they can overlap.
  • Now, add the flour, salt, pepper and garlic salt to the remaining fat in the pan.
  • Stir to mix well.
  • Add the boiling water and blend thoroughly.
  • Cook 3 to 5 minutes until it thickens.
  • Add applesauce and lemon juice, mix well and pour this entire mixture over the chops in the casserole.
  • Bake 1 1/2 hrs at 400 degrees.
  • Check for doneness, depending on the size of the chops you may need to cook an additional 15 minutes.

  1. My family loves the apple and pork chop combo. Referencing a family recipe I browned the pork chops in the oil with a little cinnamon. I then topped the pork chops, once placed in the baking dish with a little more cinnamon and garlic powder. Then topped that with a 1/2 cup more of applesauce. Then added the gravy. My family loved it. Thanks for a new spin on the apple/pork combo.
     
  2. This was yummy. I added a little extra oil to the pan before I put the flour in. I also put in a package of beef oxo to add a little more colour. I did it all in my cast iron fry pan, so I didn't even have to wash an extra pan. I didn't have the burning problem that Lydia's Mama had, but perhaps her oven is a little hotter. I know I have to knock the temp. down 50 degrees on anything I cook in mine. We poured the gravy over rice and it went very well.
     
  3. This recipe was OK. Didn't work too well when I added the flour mixture to the fat drippings in the pan. Just kind of made little fried flour balls. Anyway, the pork chops were very tender, which I liked, but the applesauce gravy did not have as much flavor as I had hoped. Also, the pork chops stuck to the bottom of my dish (even though I had sprayed it with cooking spray first) and the applesauce *really* burns on to the sides of the dish and is really difficult to clean up. Just for that factor, I probably won't make it again.
