Pork Chops Madrid

"This recipe is so simple, results are great. Adapted from a number of recipes for this style of pork chop (Chuletas de Cerdo A La Madrilena). Some recipes call for onions, which you could probably just add to the dish before it goes into the oven, or serve some sauteed onions on top of the finished product. (Prep time does not include 1 hr+ marinating time)."

  • Mix all the ingredients, except for the pork chops, in a casserole dish. Best to use a casserole dish with a proper fitting lid.
  • Place the chops in the mixture and let sit for at least an hour, longer if you have the time, and turning at least once half way through.
  • Place casserole dish in a 350 degree oven for about 50 minutes, covered. Very important it be covered.
  • Chops will be moist and tasty, you can spoon some of the juice over them once they're on the plate. I like to serve with spanish rice and salad.

  1. Well we had a mixed bag here from a 2 to a 5 so we settled on a 4, we had thick pork loin chops with bone in (4 chops = 1K) but 50 minutes was way too much they were dry but flavourful would cut time back to 30 or 35 minutes. Thank you Magpie diner, made for Make My Recipe Edition 11.
     
  2. Well, this is simple, but I wouldn't say great. We found these to be just okay. They were not fall off the bone tender or extremely flavorful. Probably will not make again as there are better chop recipes out there.
     
  3. Very easy to put together and the garlic and herbs gave these pork chops a wonderfully savory flavor. I wasn't sure if I was suppose to chop up the herbs, but figured it would give the chops more flavor if they were finely chopped. I used Spanish paprika and also used a little rosemary. Made for ZWT5.
     
  4. Where is the 10 star review button? These pork chops were THAT good - the best I've ever made! The meat was tender and moist with just the right amount of seasoning... the marinade was a breeze to put together (I marinated mine for 3 hours, turning about every half an hour). I made as directed except I omitted the bay leaf. I used a bone-in loin pork chop. YUMMY! The garlic added a nice burst of flavor! Made for the Groovy GastroGnomes, ZWT5.
