Pork Chops With Curried Apples

"Adapted from a recipe by EBSEPKE at allrecipes.com. Boneless pork chops are browned, then baked with a topping of caramelized onion, apples and curry powder. Serve with basmati rice."

  • Season pork chops with salt and pepper. In a large skillet over medium-high heat, brown pork chops in oil, flipping once to brown both sides. Arrange chops in a 9x13 inch baking dish.
  • In the same skillet, melt butter over medium heat. Cook and stir onions and apples in butter until caramelized, 12-15 minutes. Stir in applesauce, apple juice, chicken broth, garlic, and curry powder. Season to taste with salt and pepper. Pour over chops, and cover dish with foil.
  • Bake in a preheated 350°F for 40 minutes, or until pork chops are cooked through.

I'm a 48 y/o gay Jewish man in the suburbs immediately north of New York City. I'm a general internist, practicing and teaching at a medical college north of NYC. I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
