  1. mix together allspice, salt and pepper-rub on all sides of roast.
  2. place roast in roasting pan with fat side up.
  3. brush mustard on top of roast.
  4. Zest the orange, then place the zest over roast.
  5. Slice onion into thin strips.
  6. place onion and craisins on top and pour in chicken stock.
  7. Bake at 250 degrees for 6 hours.
  8. let meat rest for 5-7 minutes
  9. before serving- take some liquid from roaster and heat in separate pan for gravy- thicken with cornstarch to desired thickness.
