"I actually tweaked another recipe I found on here becuase I didn't have the ingredients not to mention that I'd prefer to bake instead of fry."

  • Preheat oven to 350 degrees.
  • Mix bread crumbs, saltine crackers, ginger and sage in a bowl. Mix well.
  • Add parmesean cheese, enough to suit your liking, and mix well.
  • Pour onto a plate.
  • Put Canola oil in a baking dish.
  • Dip pork tenderloin in beaten egg. Let extra egg drip off.
  • Put tenderloin in the bread crumb mixture and cover well.
  • Place Tenderloin in baking dish.
  • Place in oven and cook until top/sides are golden brown. Turn over so both sides are crispy. Cook until juices run clear.
