Ingredients Nutrition

  • 281 g pork loin, cubed. Remove as much fat as possible
  • 1 small red onion, chopped
  • 1 medium carrot, chopped
  • 1 stalk celery, chopped
  • 290 g chopped canned tomatoes
  • 12 teaspoon hot italian seasoning

Directions

  1. Fry onions, carrot and celery in a little oil or spray till softened and colouring.
  2. Add pork and fry till browned.
  3. Add tomatoes and Italian seasoning.
  4. Add stock cube and add enough water to cover contents.
  5. Bring to boil, cover, turn down heat and simmer on stove till tender or place in oven and simmer till tender.
  6. Serve with rice or polenta or over baked potato.
