- 281 g pork loin, cubed. Remove as much fat as possible
- 1 small red onion, chopped
- 1 medium carrot, chopped
- 1 stalk celery, chopped
- 290 g chopped canned tomatoes
- 1⁄2 teaspoon hot italian seasoning
directions
- Fry onions, carrot and celery in a little oil or spray till softened and colouring.
- Add pork and fry till browned.
- Add tomatoes and Italian seasoning.
- Add stock cube and add enough water to cover contents.
- Bring to boil, cover, turn down heat and simmer on stove till tender or place in oven and simmer till tender.
- Serve with rice or polenta or over baked potato.
