  1. Preheat oven to 350 degrees.
  2. Heat olive oil in heavy skillet.
  3. Add leeks, portabellos, and bok choy; saute until tender.
  4. Add dressing; mix thoroughly.
  5. Remove from heat.
  6. Fill tortillas with portabello mixture and cheese.
  7. Roll up and place on cookie sheet.
  8. Bake 10 minutes, until cheese has melted.
