Portobella Burgers

  • Heat grill on high.
  • Clean the portobellas and gently dry.
  • Slice onion in rings & toss with light coat of olive oil. Place in a grill pan.
  • Brush a light coating of extra virgin olive oil on the top and underside of the portobellas.
  • Place pan on grill and cook the onions over medium-low heat. Add the portobellas directly on the grill over a medium-low heat for about 10 minutes, flipping once, until the mushrooms are cooked.
  • Towards the end of the mushrooms cooking time, place buns on the grill and toast. (If you have a shelf in the grill, putting them here will help ensure they don't burn and still get toasty.).
  • Turn heat off, top mushrooms with monterey jack, and allow the cheese to melt before placing the portobellas in the buns.
  • Serve with grilled onions as burger toppings.
