  1. Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat.
  2. Add the onion and garlic; cook, stirring constantly, until aromatic and tender, about 2 minutes.
  3. Add the mushrooms and carrot; continue to cook until they are tender, about 4 more minutes.
  4. Layer the bottom half of a bun with lettuce, a burger, and a tomato slice. Top with the upper half of the bun and serve hot.
