  • Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat.
  • Add the onion and garlic; cook, stirring constantly, until aromatic and tender, about 2 minutes.
  • Add the mushrooms and carrot; continue to cook until they are tender, about 4 more minutes.
  • Layer the bottom half of a bun with lettuce, a burger, and a tomato slice. Top with the upper half of the bun and serve hot.
  • Toast bread in oven or on panini grill until lightly browned.
  • Spread them with your choice of mayonnaise, cheese, or mustard.
