- 4 lbs frying chickens, boned and cut up
- 5 large tomatoes, cut up
- 1 large onion, sliced
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 yellow pepper, sliced
- 1 (4 ounce) can black olives (pitted or get the pitted ones)
- 3 -4 garlic cloves, minced
- fresh parsley, chopped
- salt and pepper, to taste
- 1 lemon, squeezed
- 2 cups water
directions
- Place all the ingredients in a baking dish uncovered at 350°about 40 minutes.

Bonito, pimentas do amor! (Beautiful, love peppers!) I cut up the veggies first, mixed them together, put the cut up chicken on top, seasoned with lemon pepper, and mixed chicken into veggies. I wanted the lemon pepper mostly on the chicken plus saved myself some washing up. I also added 2 cloves of garlic. This took me 20 minutes to prepare but I am not the fastest in the kitchen. I served this with Recipe#367369 which is baked at 375 degrees and put this in also for 40 minutes at that temperature. I do not think it would have mattered if it had been in longer, so if you are trying to make an oven meal that might suit your convenience better. Next time I would eliminate the water entirely, double the lemon juice, add at least 1/2 teaspoon of salt, 1/4 teaspoon of lemon pepper, and 4 cloves of garlic instead of 2. Made for ZWT5.
