Pot Roast, Scandinavian Style

  • Mix first 4 dry ingredients.
  • Rub flour mixture over roast.
  • Brown roast in oil.
  • Discard any remaining oil.
  • Add water and cinnamon stick to pot.
  • Place fruit on roast.
  • Cover tightly; cook at 325 for about 3 hours.
  • During the last 20 minutes add orange juice.
  • Roast is done when tender.

  1. A nice change from my regular pot roast. I used dried apples and plums. The orange comes through stronger then I expected nice and warming with the ginger and cinnamon. Thanks!
     
  2. Would you believe I quadrupled this for a huge party? It was delicious, with compliments from everyone, young and old -- including the Scandinavian guests of honor! Because of the large quantities, I had to prepare this ahead of time; when cool, I sliced, arranged on platter, and reheated prior to serving. This gave me the chance to reserve the roasting liquid (with all that great dried fruit), reduce over low heat for a long time (which created a wonderful aroma as guests arrived!) and serve as a kind of condiment/gravy. Thank you, Sheri! This was even better than I imagined it would be.
     
  3. This roast is off the charts!!!!!!!! It is so good! I thought that the combination of fruit and meat would be odd, but another's 5 star review gave me the confidence to try. It was incredible! My DH and I are part-time vegetarians, only having meat once a month or so ... I can't wait til the next time! I know what I'm making for dinner!   4. Super savory, warmly spiced, tangy and sweet flavors. Easy to follow recipe. Made it in an electric pressure cooker 35-40 min. Only had a tri tip blade, which can be tough and stringy due to overcooking. I sliced it against the grain and it was delicious. The sauce/gravy is fantastic. Going to make some tasty smothered chopped beef open faced sandwiches later.
