  • Preheat oven to 375°F.
  • Spray a 9in square baking pan with cooking spray.
  • In a med skillet over med heat, cook sausage until no longer pink, about 5 minutes.
  • Place on paper towels to drain.
  • Spoon sausage into prepared pan.
  • Top with pepper and garlic, sprinkle with 1/2 of oregano and onion flakes.
  • Place potatoes in a single layer over pepper.
  • Pour wine or broth over potatoes.
  • Sprinkle with paprika and remaining oregano and onion.
  • Bake until potatoes are tender, about 1 hour.

  1. Loved the hearty and homey flavor. I used veggie sausage patties that I diced, the chicken broth and smoked paprika. The single thing that kept me from making this a 5 star review was that even after the hour of baking the potato was still quite "firm". I'm sure that I'll make this again because I really do like it but next time I'll either pre-cook the potato some or cover the dish for about the first 45 mins .......or maybe both. I should also say that I made a single serving and the portion was right on for one person.
     
  2. I multiplied this by 1 1/2 because I had 12 oz. of sausage. I used breakfast sausage, 1 green pepper, 1/2 red pepper, and chicken broth. I also used about 1/4 c. minced fresh onion instead of the onion flakes, which I didn't have. The flavor was good (if slightly plain). However, I elected to cover the pan and cook for the hour, then cooked it uncovered for an additional 15 minutes. The longer cook time was due to my extra potatoes, but the pan really needs to be covered. I don't see how the potatoes would cook properly otherwise. Also, the multiplied recipe was exactly enough for the 4 of us so I have no idea how the original could serve 6 as a one-dish meal.
     
  3. MMMM ... I liked this for dinner but this would make a great breakfast as well. I did make a few changes however. I had hot sausage that I cooked to a crumble state. I added diced onion and the garlic to that while it cooked. I also used roasted red peppers. I wanted DD to eat this and feared it would be too hot if I just used chicken broth so I whipped together milk and a can of cream of celery soup and dumped that on instead. I also subbed seasoning salt instead of paprika. What turned out was a great tasting dinner and super filling. Tomorrow we are going to add some more veggies and eggs then bake for breakfast.
