Potato Apple Au Gratin

  • 4 cups potatoes, peeled and thinly sliced (about 5-6 med size russet potatoes)
  • 2 cups whipping cream
  • 1 garlic clove, thinly sliced
  • 1 teaspoon thyme
  • 1 apple, peeled cored and thinly sliced
  • 1 dash nutmeg
  • 2 tablespoons butter
  • 1 cup thinly sliced onion
  • 12 cup shredded gruyere (or favorite cheese)
  • 1 cup breadcrumbs
  • salt & pepper

  • Set oven to 350.
  • Boil sliced potatoes for about 30 mins in salted water, drain and pat dry.
  • Grease baking pan (9"x13" or smaller).
  • While potatoes are drying, melt butter and sauteed chopped onions and apple slices in frying pan until soft, add dash of nutmeg.
  • Heat 2 cups of cream in a small sauce pan, add sliced garlic. Once boiling reduce to low and simmer until cream is slightly reduced.
  • Add 1 tsp thyme to cream.
  • Arrange boiled potatoes on bottom of pan, add layer of apples & onions, top with remainder of potatoes. (if you like ham, saute ham with onions and apples and add in this layer).
  • Pour hot cream over potato apple mixture and poke through in a few places to be sure the cream get to the bottom of pan.
  • Top with favorite cheese, I used gruyere.
  • Top with bread crumbs and parsley if desired.
