Really lovely--easy to throw together with my leftover mashed potatoes. I used a small bit of Smart Balance Light to give the cakes some butter flavor (for my husband!), and I found that they were ready to be flipped when I jiggled the pan and they moved easily; otherwise, they were too pale underneath and ended up globbing and making a mess. Will definitely use this recipe again, maybe adding garlic and parsley next time. Thanks!
