  • In a medium size bowl, combine potatoes, egg white, onion, flour, salt and pepper.
  • Meanwhile, heat oil in a large skillet over medium high heat.
  • When hot, put about 2 tablespoons potato mixture for each cake into skillet. Cook until well browned, then turn with a spatula and cook other side until brown.
  • Continue making cakes, keeping first ones warm.

  4. Really lovely--easy to throw together with my leftover mashed potatoes. I used a small bit of Smart Balance Light to give the cakes some butter flavor (for my husband!), and I found that they were ready to be flipped when I jiggled the pan and they moved easily; otherwise, they were too pale underneath and ended up globbing and making a mess. Will definitely use this recipe again, maybe adding garlic and parsley next time. Thanks!
