- 2 small baked potatoes
- 1 teaspoon vanilla
- powdered sugar (16 oz., 1 1/2 to 2 boxes)
- crunchy peanut butter
directions
- Peel potatoes; mash in large mixing bowl. Gradually add vanilla and sugar until mixture is like dough; roll out on waxed paper. Spread generously with peanut butter; roll into a log. Chill for several hours or overnight. Slice; store in refrigerator. Rolls may be frozen.
