Potato Candy

"Cheap, easy, and quick little candy that my mom taught me how to make when I was little. I used to love to use my hands to squish it all up. My daughter now helps me make it. The recipe is nice because there is really no measuring involved."

  • First, poke several holes in the potato and place in the microwave for about ten minutes or until soft (like a baked potato).
  • Let cool a little so you can touch it, then remove the skin.
  • Mash the potato until smooth and no chunks are left.
  • Slowly pour in powdered sugar and mix with potato.
  • There is really no measuring, but it usually takes the entire bag if it is not a small potato; the goal is to get it to the consistency of pizza dough.
  • After mixing the bag of powdered sugar with the potato, roll the "dough" out on wax paper with a rolling pin until it is about 1/4" thick.
  • Smear peanut butter over the top of the "dough" evenly.
  • Roll the entire dough up (like a newspaper) to create layers of dough and peanut butter.
  • Cut into desired sections and enjoy!
