Directions

  1. Cook the potatoes in their skins in boiling water for about 15 minutes, until just tender.
  2. Drain and remove the skins.
  3. Cut into large dice and place in a bowl.
  4. Add the French dressing, toss lightly and leave to cool.
  5. Slice the scallions and cucumber thinly and add to the potatoes.
  6. Mix the mayonnaise and yogurt until smooth.
  7. Add to the salad and toss well.
  8. Transfer to bowls to serve.
