  • POTATO-DRESSING BALLS

  • 1 (24 ounce) package Simply Potatoes Traditional Mashed Potatoes
  • 1 (6 ounce) package chicken, stuffing-mix
  • 1 12 cups water
  • 14 cup butter or 1/4 cup margarine
  • 2 eggs
  • 1 cup chopped spinach (fresh or frozen)
  • 1 (4 ounce) package of crumbled goat cheese
  • SAUCE or DIP

  • 4 slices bacon
  • 8 ounces fresh mushrooms, cleaned and chopped
  • 1 (8 ounce) package cream cheese
  • 1 (16 ounce) jar prepared alfredo sauce

  • POTATO-DRESSING BALLS:

  • Heat oven to 375 degrees.
  • Open package of Simply Potaoes Traditional Mashed Potaoes and place potatoes in large mixing bowl.
  • Place water and butter in sauce pan. On top of stove, bring water and butter to boil. When butter is melted, stir in crumb mixture and remove pan from heat. Stir to make sure all crumbs are moistened and then let rest a couple of minutes.
  • In a small bowl, beat eggs until smooth.
  • Add eggs and stuffing to potatoes in the large mixing bowl and stir until well mixed.
  • If chopped frozen spinach is used, thaw spinach and pat dry with paper towel. If fresh spinach is used, wash leaves and then pat dry with paper towel before chopping into fine pieces.
  • Add spinach to potato-dressing-egg mixture.
  • Makes sure goat cheese is well crumbled then add it to dressing-potato-spinach mixture and stir until all ingredients are well blended. Allow to rest 5 minutes.
  • Greese cookie sheets.
  • If serving as an entree, using hands shape potato mixture into 18 balls (3 per serving) and place on cookie sheet. Bake for 30 minutes or until golden brown and set.
  • If serving as appetizers, shape into 36 1-inch balls and place on cookie sheet. Bake 20 to 25 minutes or until golden brown and set.
  • Serve potato-dressing balls warm.
  • SAUCE/DIP:

  • While potato-dressing balls are baking, fry bacon in 10-inch skillet.
  • When cooked, remove bacon from skillet and allow to cool on paper towel.
  • Save 1 tablespoon bacon grease in pan and discard remaining grease.
  • Stir mushroom pieces into hot grease in skillet. Over medium high heat, stir musrooms until they are slightly cooked (about 3 minutes).
  • Crumble or tare bacon into small pieces and add to mushrooms.
  • Cut block of cream cheese into four chunks and add to mushrooms and bacon in skillet. Stir cream-cheese until melted.
  • Pour contents of jar of alfredo sauce into mushroom mixture and stir until blended and bubbling.
  • If serving potato-dressing balls as an entree, place balls on a serving plate and serve sauce on the side like a gravy.
  • If serving potato-dressing balls as appetizers, place balls on a large plate with sauce in a bowl with a dipping spoon.
