  • Chop carrot and potatoes and cook in boiling water.
  • Drain lentils and prepare garlic.
  • Once cooked, remove carrot and potatos from boiling water and combine with lentils, oil and garlic in a frying pan.
  • Add salt and pepper to taste.
  • Cook on medium until heated through, stirring regularly.
  • Sprinkle coconut and parsley near end of cooking time and stir to mix the flavours.
  • Serve and enjoy!
