  • 2 tablespoons vegetable oil
  • 10 potatoes, cleaned &,sliced thinly
  • 2 onions, sliced in jullienne style
  • 1 green pepper, sliced thinly
  • 12 lb bacon, sliced widthwise into 1/2 inch pieces
  • salt and pepper

directions

  • In a large skillet, heat oil.
  • (I like those counter-top plug-in styles for this recipe).
  • Put potatoes in skillet with onion, green pepper and bacon sprinkled over the top.
  • Cover and let steam until potatoes are softening up, flipping the concoction occasionally.
  • When potatoes are very soft, take the lid off, and let the whole thing fry until the potatoes are getting crispy.
  • When the spuds have crisped to your liking, turn the skillet off and indulge your'fat tooth'!

  1. a very handy recipe to have when unexpected visitors arrive. It can be played with by adding lots of other ingredients. Any dry white wine can be added, scrambled egg, or cornedbeef.

I live in Canada, and I work in the restaurant industry (not a chef!). Don't have a favorite cookbook, but I love these internet sites, (especially this one, where you can get the dietary info - that's cool). I'm pretty passionate about animals, and about my health, (regardless of what my beer and cigarette habit might say about me!). The majority of food I like to eat is vegetarian, if not, vegan. I am able to enjoy a good steak every now and again, however. As long as I don't have to cook it. (I hate cooking meat - makes such a mess...) I have recently had a month off - I took the time to backpack around Mexico by myself. Crazy? Nah. Well, maybe...
