Directions

  1. In buttered shallow baking dish, layer potatoes, onion, and mushrooms.
  2. Sprinkle with salt, pepper and tarragon.
  3. Pour whipping cream over all.
  4. Cover with foil.
  5. Bake at 350° for 30 minutes.
  6. Remove foil, continue baking 30 minutes longer, or until the potatoes are tender.
  7. Sprinkle with parsley.
