Ingredients Nutrition

  • 1 14 cups jiffy pancake mix
  • 2 eggs
  • 2 cups finely shredded uncooked potatoes (well drained)
  • 1 teaspoon salt
  • 1 tablespoon butter

Directions

  1. Melt butter in 325° skillet.
  2. Blend all ingredients thoroughly.
  3. Drop dough onto skillet and fry pancakes on each side until golden brown.
  4. Serve while still hot.
