  1. Using a food processor, grate potatoes and onion. Do not drain water.
  2. In a bowl, beat eggs.
  3. Stir in potato and onion.
  4. Add pancake mix, minced garlic, salt and pepper.
  5. Stir until well blended.
  6. Heat 1 tablespoon oil in large frying pan.
  7. Spoon 3 tablespoon sized portions of potato mixture into hot frying pan.
  8. Fry 3 to 4 minutes on each side.
