Potato Patties

- 2 medium russet potatoes
- 1 egg
- 3 tablespoons butter
- 1⁄4 teaspoon salt
directions
- Pare and quarter potatoes.
- Boil til very tender.
- Drain and mash well (food processor makes this easy).
- Beat in egg and salt.
- A little flour may be added if the mixture is too thin.
- Melt butter in skillet on medium heat.
- Spoon potatoes into pan and saute til brown and slightly crusty.
- Turn carefully and brown on the other side.
- Serve hot.

Oakland, California Legal Secretary. I wore out Joy of Cooking and Sunset's Italian Cooking, but often go back to Betty Crocker for basics. I'd love to find a copy of B.T. Hunter's cookbook from the 70's if anybody's seen it. I'm going as organic as possible in these times (I'm highly sensitive to food additives--colors, flavors, chemicals). If I had a month off, I might write a recipe book in my sister's memory--she was the great cook in the family.
