  1. In a bowl, beat egg yolks until frothy.
  2. Add next 6 ingredients; mix well.
  3. Beat egg whites until stiff; fold into potato mixture.
  4. Brush 8 small ramekins with melted butter.
  5. Spoon potato mixture evenly into ramekins.
  6. Brush remaining butter over potatoes.
  7. Bake at 375 degrees for 30-35 minutes or until lightly browned.
  8. Serve immediately.
