Ingredients Nutrition

  • 5 lbs small red potatoes
  • 12 eggs, boiled and chopped
  • 1 lb bacon, fried and crumbled
  • 2 bunches green onions, chopped
  • 1 12 cups mayonnaise, adjust to taste

Directions

  1. Boil potatoes until just done but not mushy, allow to cool and then cut into smaller pieces if necessary.
  2. Mix potatoes with chopped boiled eggs, crumbled bacon, chopped green onions, then stir in mayonnaise to desired consistency.
  3. Season to taste with salt and pepper.
