Potato Soup

"Great Potato Soup for a cold winter day and sooo filling.Makes really large kettle of soup and great heated up to...I used the unpeeled potatoes in mine, was really different, lots better than plain potatoe soup..just cube them up.... also I didn't have the half&half, so I poured a little bit of milk in mine and it was just fine..Add your own seasonings to taste, I just added salt and pepper and let it simmer....this thickens up nicely, not a runny soup, that stick to your ribs kinda soup"

  • Saute margarine and chopped onion until clear.
  • Add chopped potatoes (peeled of not) Cover with water.
  • Cook until tender.
  • Add 3 T. chicken bouillon (cubes or dry) Add chopped carrots before potatoes are done.
  • Reduce heat.
  • Mix flour and half&half.
  • Add to soup.
  • Add Velveeta cheese.
  • Stir on occasion until cheese is melted and let simmer till done.

Hello everyone,I was introduced to this site by my friend Peppermintkitty....I love the site so far..... Let's seeeee, I live in a rural Oklahoma town (in the middle of nowhere! haha) I'm married and have 3 beautiful daughters,ages 12,11 & 8.....I'm a nurse in a nursing home and love to collect recipes..although I find it hard to find the time to cook like I used to, but I must say I can cook pretty good! or at least my hubby doesn't complain! :) We have 2 dogs, a yellow lab,Prince, and a female Shi-tzu,Lexie..Lots of cats and 4 horses,Honey,Jewelz,Guardian and Angel.They are my babies!! I stay really busy with work,kids and hubby! But am hoping I can meet lots of new people on here....
