  • Bring chicken broth to a quick boil, reduce heat and add the potatoes and onions.
  • Add salt. Cover and simmer for about 20 minutes.
  • Mash the potatoes into the broth.
  • **But make it a small chunky bits** Add the rest of the ingredients and simmer for 5 minutes more. Serve with a loaf of French bread.
  • We like to take the bread and dip it into the soup.
  • We also add a cheddar cheese topping for ours as well and chopped chives as a topping as well.

  1. This potato soup recipe is delicious. My friends are always asking me to make this for them. Its easy to make. I add cheese and scallions just before serving it.

  3. i left out the chervil (wassat?) and parsley, but added some extra salt and some seasonings i had. mr "if it doesn't have cheese, catsup, or brown sugar, i'm not eating it" ate it ALL. like it was really good. then i tried it. and it WAS good!

  5. This was pretty good. I found it a little bland but I also found it quite comforting. The ease of preparation was unbeatable though!
