Potato Soup in a Mug

"Almost a mini-version of the "soup in a jar" recipes you see everywhere. However, this is for individual servings that just take a few minutes in the microwave instead of an hour on the stove! I made these for Christmas for everyone (including myself). I keep them in my drawer at work to warm up when I don't have time for lunch. They're also great for students in a dorm with nothing but a microwave, dieters trying to limit portion sizes, or quick and easy things for kids to make themselves. Just put them into ziploc bags and seal. You can make as many or as few as you want. I find it easist to set out 8-10 ziplocs and just add each ingredient to the individual bags instead of making them one at a time."

  1. The texture was a little funky, but the flavor was good. That said, I don't think I will be making this again.

  2. I made this for some family for Christmas and they all raved about it! I increased the amount a little and they all had plenty. Thanks for the great recipe!

  3. I tried this out on my husband so I could see if this would work for Christmas gifts. After trying to get the consistency right, I think I'll have a go at it! I used the optional Butter buds & added some dried minced onion. I also used nonfat powdered milk for the creamer, since that was what I had. Hope everyone enjoys them as gifts; it was quite easy to make!

  4. OK, this is a definite keeper. My twin daughters are going to college next year, so I thought this would be a great dorm recipe. I tried it out on one of them tonight. She loved it, and was slightly perturbed that I had only mixed up 1 serving. I assured her that I would make up lots of zip lock bags of it. She said it was a great comfort food. Thanks for a great recipe.

  5. Great recipe. I made it today since it was chilly out, and it hit the spot. I used chicken boullion instead of the gravy(wasnt for sure if that was a typo), I used 3/4 tsp of it. I also subs cheddar cheese for the parm. I will definetly make this again.
