Directions

  1. Heat oil in large saucepan over high heat.
  2. Add onions, leeks, celery and carrots. Saute until most vegetables are deep brown, about 20 minutes.
  3. Add potato, water, and salt. Bring to boil, then reduce heat to medium. Cover and simmer until potatoes are tender (about 15 minutes).
  4. Puree soup in blender. Season to taste with salt and pepper. Return soup to simmer.
  5. Ladle into bowls and serve.
