Potato Spinach Casserole

"Are you looking for a new look for your mashed potatoes? Try this colorful and tasty side dish. Cooking time includes boiling potatoes and time in the oven. I located this recipe in The Stockman Family Cookbook several years ago and have modified it for my family."

 1. This would be a very make ahead recipe, and then pop in oven! Delicious

 2. This was really good. I used left over mashed potatoes. When I went to start making it I had a moment of panic because sometime last night someone ate about half the mashed potatoes I was going to use! So, I added broccoli, ham to the mix. I also added cheese soup instead of the cheese. My dad and I thought this was really good, my boyfriend said it was "okay."

 3. Very good casserole. A nice change from the typical potato side dish. We really enjoyed this.

Hello to all you great chefs out there from around the world.

I live in the Missouri Ozarks where good down home food and eating is what it is all about.

Hubby and I use to love to travel around the country, we are not able to do that anymore.

Love the times my family can all get together. Love going to flea markets and garage sales to scout out whatever I am collecting at the time. I love old pottery, crystal vases, fun picture frames, fabric, gardening. We will be doing container gardening only this year due to a decline in health. Plan on several kinds of tomatoes and pepper. Love flowers and houseplants.

I love my digital camera, and hope to find the recipes of the pictures I have already taken. I don't have a favorite cookbook, unless it is the one in my hand at the moment. They are all like special friends. We love our furbaby Abbey. She keeps us on track.
