  • Use a damp cloth to remove any dirt from mushrooms. Do NOT wash mushrooms!
  • Drain any liquid from package of mashed potatoes. In a bowl, mix potatoes, garlic, 2/3 of cheese, and 2/3 of rosemary. Top the inside of each mushroom with 1/4 of potato mixture, spreading almost to the edge of the cap. Use a fork to create ridges on top of potatoes. Sprinkle remaining rosemary and parmesan cheese on top of potato.
  • Place filled mushrooms, potato side up, in a baking dish and bake at 425 degrees for 30 minutes or until golden brown on top.

  1. What a treat! My favorite mushrooms with just the right amount of potatoes and cheese...the only part I didn't like was having to wait for 30 minutes before digging in :-)
