Potato Vegetable Soup

- 1 tablespoon butter
- 3⁄4 cup celery, thinly sliced
- 2 (13 3/4 ounce) cans chicken broth
- 1 (8 ounce) can tomatoes
- 1⁄4 cup parsley, chopped
- 3⁄4 teaspoon marjoram
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
- 4 cups frozen hash brown potatoes
- 1 1⁄2 cups vegetables (green beans, carrots, limas,or peas)
directions
- In a large saucepan, melt butter.
- Add celery, and cook 5 minutes over medium heat, until tender.
- Add chicken broth, tomatoes, parsley, marjoram, salt and pepper.
- Cover and simmer over medium heat 20 minutes.
- Add potatoes and vegetables.
- Cover and cook 10 minutes longer.
